200g baby spinach leaves
125g cherry tomatoes halved
2 radishes sliced thinly
1 lebanese cucumber, sliced thinly

Meat Balls
600g Veal Mince (you will need to make your own mince after removing all fat)
1 tspn ground coriander
1 tspn ground cumin
1/2 cup coarsely chopped fresh coriander
1 tbspn sweet chili sauce
2 tbspn Worcestershire sauce
2 egg whites beaten lightly
2 tbspn MCT Oil

Combine all the ingredients except oil, in a large bowl, mix well with hands.  Roll heaped
teaspoons of mixture into balls.  Heat oil in a large non stick frying pan, cook balls in
batches until browned all over and cooked through.  Drain on absorbent paper.  Cool.

Combine spinach, tomato radish, onion and cucumber in a large bowl.  Add Meat Balls
Drizzle with sweet chili sauce.  Toss gently to combine.
