500g rice noodles
2  tbspn MCT Oil
500g pork fillets sliced thinly (all fat removed)
200g oyster mushrooms sliced
1  bunch (500g) English spinach
1/4 cup Oyster Sauce
1  tbspn Fish Sauce
1  tbspn Sugar
2  tbspn Sambel Oelek
1  tbspn Chopped fresh coriander leaves

Place noodles in bowl, cover with warm water, stand 5 minutes, drain.  Heat oil in wok
or large pan, add pork in batches, cook until browned and tender.  Return pork to wok
with mushrooms, spinach leaves, sauces, sugar and sambal oelek, cook stirring, until
heated through.  Add noodles and coriander, stir gently until hot
