1  Cup white long grain rice (200g)
6  cm strip lemon rind
3  cups boiling water
2  tspn MCT Oil
2  low fat bacon rashers chopped finely
1  medium carrot sliced thinly
1  trimmed stick celery sliced thinly
1  clove garlic crushed
1  tspn grated fresh ginger
80g Button Mushrooms sliced thinly
2  green onions sliced thinly
1  tbspn Soy sauce

Cook rice, rind and the water in large microwave safe bowl, uncovered on high about 12
minutes or until rice is tender, stirring once during cooking.  Rinse rice well; drain.  Discard
rind.  Combine oil, bacon, carrot, celery, garlic and ginger in large microwave-safe bowl,
cook covered on high about 5 minutes or until vegetables are just tender, stirring once during
cooking.  Drain away excess liquid.  Add rice, mushrooms, onion and sauce to bowl; mix to
combine.  Cook covered on High about 4 minutes or until hot.
