500 g skin-free chicken breast, cut into cubes (remove all fat)
2 Tbsp honey
1 Tbsp soy sauce (lite, low salt)
1 tsp MCT oil
1 Tbsp garlic, minced
1 cup carrots, sliced
1 cup onions, diced
Using a non-stick frying pan or wok, sauté the onions in MCT Oil and garlic. Add the
chicken pieces and stir-fry until golden brown.
Add the carrots and continue stir-frying for 2 minutes. Add soy sauce, stir and leave to
simmer for 5 minutes. Before serving add honey and stir through.
Serve on a bed of steaming rice.
