(serves 2 – suitable for school lunches)

1/2 cup couscous
1/2 cup warm water or liquid stock
1/2 cup mixed chopped capsicum
1/4 cup chopped dried apricots
2     green onions, chopped
1     single chicken breast fillet – all fat removed – char grilled
and sliced mixed salad leaves
1     pita bread – cut into wedges (check the label for the pita bread with the least
amount of fat)
2     tbspn Maple Syrup
2     tbspn Balsamic Vinegar

Place couscous and water in a bowl.  Stand for 5 minutes or until all the water is absorbed.  Fluff
with a fork.  Add capsicum, apricots and onions.  Mix well.
Place cous cous on plates, top with the chicken, salad leaves and pita bread.  Whisk together the
syrup and vinegar – drizzle over top.
