500g chicken breast fillet (all fat removed and cut into strips)
1/4  cup orange juice
1      tbspn honey

Papaya salsa
1/2 papaya peeled and diced
2     green onions finely chopped
1     small red chili (seeded and thinly sliced)
1     tbspn orange juice

Tomato Relish with a Small amount of MCT Oil
1     red onioin, finely chopped
1     clove garlic, finely chopped
1     tspn cumin powder
3     tomatoes roughly chopped
1/2 tspn Tabasco sauce

Thread chicken onto skewers.  Combine orange juice and honey in a small bowl.  Brush chicken
with orange juice mixture.  Prepare Salsa Mix together papaya, green onions, chili and orange
juice in a small bowl.  Set aside for 10 minutes for flavours to combine.

Prepare Relish Cover a small saucepan with a small amount of MCT Oil.  Add onion, garlic and
cumin.  Cook over medium heat for 2 to 3 minutes or until onion has softened.  Add tomatoes and
Tabasco.  Reduce heat.  Simmer for 10 to 15 minutes or until tomato has softened completely and
lost its shape.  Serve relish hot or at room temperature.  Place chicken skewers on pre-heated
char grill or barbecue.  Cook over high heat for 8 to 10 minutes or until cooked through, turning
and basting frequently.  Serve skewers with steamed Asian greens and the 2 sauces.
