Beef Larb
500g beef mince (you will need to make your own)
1 large lemon juiced
1/2 red onion finely sliced
2 cloves garlic minced
4 kaffir lime leaves, sliced
3 stalks lemon grass finely sliced
1/2 bunch thai basil leaves only
1/2 bunch mint leaves only
1/2 bunch coriander leaves only
3 spring onions, sliced
3 TBSPNS Fish sauce
1 TBSPN Brown Sugar
1/4 cup rice
1 dried or 1 long fresh chili finely sliced
lettuce leaves to serve
In a dry fry pan cook the rice over a low heat until it is golden brown all over; about 10 minutes.
Scoop into a mortar and pestle or spice grinder and grind to a coarse powder. Make the
dressing by mixing the lemon juice, sugar and fish sauce in a small bowl. Heat a wok until hot,
add a tablespoon of MCT Oil, then fry the beef, breaking it up with a wooden spoon so that its
crumbly not lumpy. Mix the meat with the rest of the ingredients, including the ground rice, then
add the dressing and serve on lettuce cups.
