Mexican Chicken Soup
4 cups salt reduced chicken stock
1/4 cup rice
1 large onion, finely chopped
1 tomato, seeded, diced
1 TBSPN Chopped jalapenos
1/2 cup chopped coriander
2 cups shredded cooked chicken
In a large pan bring stock and 2 cups water to boil. Stir in rice and simmer for 5 minutes. Stir in
onion and simmer for 10 minutes, until rice is tender. Stir in tomato, jalapeno, coriander and
chicken. Cook for 2 minutes to heat through and season to taste.
