Little Leakers
Spiced Meatballs with Couscous
500g beef mince (you will need to make your own)
1 medium onion, grated
1/4 cup finely chopped parsley
1/4 chopped mint, plus extra to serve
1 tspn ground cumin
1/2 tspn ground cinnamon
1 egg white
1 TBSPN MCT Oil
1 1/2 cups frozen peas
1 1/2 cups instant couscous
Place mince in a bowl with onion, herbs, spices and egg white. Mix thoroughly. With wet hands
shape mixture into small meatballs. Meanwhile bring 2 cups water to boil in a saucepan. Add
MCT Oil and peas and boil for 1 minute. Remove from heat, stir in couscous and season to
taste. Cover and set aside
In a heavy based frying pan on high heat enough MCT oil to cover base of pan. Fry meatballs in
batches for 8 minutes rolling the pan to keep their shape, until browned and cooked through. Fluff
couscous with a fork and serve with meatballs scattered with extra mint.
