Spicy Turkey Tortilla Bake
1 spray low-fat cooking spray or MCT Oil
1 medium onion(s), chopped
1 clove garlic, crushed, or more according to taste
100 g mushrooms, (3 1/2 oz), sliced
400 g Italian Style Mixed Beans
1 large can canned tomatoes, chopped
1 teaspoon chili powder, or more according to taste, mild
225 g cooked turkey, (8oz), chopped (use breast with all fat remove)
2 tablespoon fresh coriander, chopped
1 pinch salt
1 serving pepper, freshly ground
4 medium soft tortilla(s) (make your own or use ??? bread
25 g half-fat cheddar cheese, (1oz), or Kraft free shredded
Heat a large frying pan and mist it with low fat cooking spray or MCT Oil. Add the onion, garlic
and mushrooms and sauté them until softened, about 5 minutes. Add the mixed beans, tomatoes
and chili powder to the frying pan. Cook for about 10 more minutes, stirring often, until the liquid
has reduced down. Stir in the turkey and coriander. Season.
Lay the tortillas onto four heat resistant plates and divide the filling equally between them. Scatter
the grated cheese on top and grill for 3-4 minutes until the cheese has melted.
