Little Leakers
Grilled Meatball Kebabs
2 clove garlic, peeled and crushed
2 teaspoon parsley
2 teaspoon oregano, dried
1/2 teaspoon salt
1/2 teaspoon pepper, ground black
1 medium red green or yellow pepper(s), (red) de-seeded and cut into 16 chunks
1 large onion(s), peeled and cut into 16 thin wedges
4 spray low-fat cooking spray or MCT Oil

Soak 4 wooden 25cm (10in) skewers in water for 10 minutes - this will prevent them burning
when you grill the kebabs.

In a mixing bowl, combine the bread crumbs and milk, leave to stand so the bread absorbs the
milk.

Place the minced beef in a food processor with the cheese, egg, garlic, parsley, oregano, salt
and pepper and the soaked bread crumbs. Pulse a few times until well combined then tip the
mixture into a clean bowl.  Lightly wet your hands and shape the mince mixture into 16 balls.  
Thread four meatballs onto each skewer alternately with a piece of pepper and onion.

Spray the kebabs lightly with MCT Oil and  grill under a moderate heat for 8 to 10 minutes, turning
them frequently so meatballs get evenly cooked through. Serve one skewer each portion.
