1 x 11g packet weight watchers pineapple jelly
1 cup low/no fat custard (or use the MCT Custard)
4 slices canned pineapple in natural juice, drained
Mint leaves to garnish
Dissolve jelly crystals in 375ml (1 1/2 cups) boiling water in a bowl. Chill for 1 hour until
thickened to the consistency of thick unbeaten egg whites. Beat jelly using an electric mixer
for 3 minutes until very light and frothy. Add half the custard, beat until combined. Pour
mixture into 4 lightly MCT Oil 1/2 cup capacity moulds. Chill for 1 hour until firm. Cover and
chill remaining custard. To serve un-mold jellies onto pineapple rings on serving plates.
Serve with remaining custard. Garnish with mint
