1 tbspn MCT Oil
2 green onion (shallots) chopped
2 tbspns finely chopped lemon grass
500g minced beef (you will need to make your own using veal or topside after
removing all fat and marbling)
2 tbspn Fish sauce
1 tbspn Sugar
freshly ground black pepper
4 large iceberg lettuce leaves, trimmed
coriander leaves to serve
Heat oil in a frying pan or wok on high. Saute' green onions for 1 minute. Add lemon grass
and mince. Cook for 5 minutes, breaking up any lumps with a spoon until browned. Add
fish sauce, sugar and season with pepper. Cook for another 5 minutes, until liquid
evaporates and mixture becomes quite dry. Place a lettuce cup in each bowl and fill with
minced beef. Top with coriander leaves.
