1/4 cup honey
2 x 200g cartons low fat plain yogurt
2 tspns gelatin
1 tbspn water
2 egg whites
2 medium passion fruit
Combine Honey and yogurt in bowl, stir until smooth. Sprinkle gelatin over water, dissolve
over hot water (or microwave on high about 20 seconds) cool do not allow to set; stir into
yogurt mixture. Spread into lamington pan, cover with foil, freeze for about 2 hours or until the
mixture has set.
Transfer yogurt mixture to small bowl of electric mixer. Beat until mixture thickens and doubles
in bulk, transfer to large bowl. Beat egg whites until firm peaks form, gently fold egg whites
and passion fruit into the yogurt mixture. Pour back into lamington pan, cover, freeze for
about 3 hours or until set (makes about 5 cups)
