
1 medium red green or yellow pepper(s), chopped
1 medium courgette, chopped
4 medium chicken breast, uncooked, skinless, cooked and cubed
(all fat removed)
1/2 small onion(s), minced
4 tablespoon sweet corn, frozen, then thawed
1 pot natural low-fat yogurt
1/4 teaspoon spices, preferably cumin
1/4 portion fresh green or red chili(s), flaked
1/4 teaspoon salt
4 medium soft tortilla(s) (buy low fat or substitute with low fat pita)
225 g Salsa
Preheat oven to Gas Mark 4/350ºF/175ºC.
In a non-stick pan, lightly sauté green pepper and courgette until slightly cooked, about 3-4
minutes.
For sauce, mix yogurt, cumin, chili powder, and salt together.
Combine chicken, green pepper, courgette, sweet corn, onion, and yogurt mixture. Place
1⁄4 of the mixture in the centre of a tortilla. Fold in the sides of the tortilla and then roll
closed from the bottom. Place each burrito opening-side down in a baking pan. When all
the burritos are in the pan, pour salsa in a strip down the centre of each burrito. Put in the
oven and bake for 15-20 minutes.
