367g tagliatelle pasta
1 TBSPN MCT Oil
1 red onion sliced into thin wedges
2 garlic cloves, crushed
4 roma tomatoes, roughly chopped
1 red capsicum diced
2 TBSPNS capers, drained, rinsed
70g baby rocket
185g tuna slices in spring water, drained, flaked

Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender.
Meanwhile, heat oil in a large non stick frying pan over medium heat.  Add onion and garlic.  Cook
stirring often for 2 to 3 minutes or until onion is soft.  Increase heat to high.  Add tomato mixture,
rocket and tuna.  Season with salt and pepper.  Toss over low heat until well combined and heated
through.  Serve.
