4 cups chopped rock melon (750g)
2 tbspns honey
200g carton low fat plain yogurt
1 tbspn gelatin
2 tbspns water
2 medium passion fruit

Blend or process rock melon, honey and yogurt until smooth. Sprinkle gelatin over water, dissolve over
hot water (or microwave on high for about 20 seconds)  Stir gelatin mixture and passion fruit pulp into
melon mixture.  Pour mixture into 4 serving dishes, refrigerate several hours or until set.
