4 skinless salmon fillets (150g each)
500g steamed green beans
1 cup flat leaf parsley leaves
1 cup coriander leaves
1/2 stalk celery chopped
4 garlic cloves, peeled
1 tspn capers
2 TBSPNS Lemon juice
2 TBSPNS water
To make salsa verde combine all ingredients in a food processor and process until mixture is
roughly chopped – set aside. Place salmon fillets on a plate.
Spoon half of Salsa Verde over salmon. Place in a steamer basket in a wok with enough water to
create steam. Bring to boil. Cover and steam for 7 minutes until fish flakes easily.
Transfer salmon and beans to heated plates. Stir any liquid from steaming plate into remaining
Salsa Verde and spoon over salmon and beans. Serve immediately.
