1/3 cup coarsely chopped fresh mint
3 tspn piri piri seasoning
2 garlic cloves crushed
500g chicken breast fillet (all fat removed)
MCT Oil to grease
Low fat natural yogurt to serve

Combine the mint, piri piri seasoning and garlic in a large bowl.  Add the chicken and toss until well
coated.  Thread the chicken onto the skewers.  Heat in a large non stick frying pan over medium high
heat.  Brush the pan with MCT Oil to lightly grease.  Add half the chicken skewers and cook for 3-4
minutes each side or until golden brown and cooked and cover with foil to keep warm.  Repeat with the
remaining chicken skewers.

Serve immediately with yogurt.
