1 tspn Gelatin
2 tbspns water
200g low fat flavoured yogurt
1 egg white
Pulp of 2 passion fruit

Sprinkle gelatin over water.  Stand in hot water until gelatin dissolves.  Combine yogurt
and gelatin.  Stir to combine.  Pour into a shallow freezer proof dish.  Freeze until firm.  
Transfer to a bowl.  Beat until doubled in volume.  Beat egg white until stiff peaks form.  
Fold into yogurt mixture with passion fruit.  Refreeze.  Remove from freezer 5 minutes
before serving.  Serve with fresh fruit and mint, if desired.
