500g (1 lb) veal steak (all fat and marbling removed)
1 tspn salt
1/2 tspn black pepper
1 1/2 tspns crushed garlic
2 fresh green chillies
1 fresh red chilie
1/4 cup MCT Oil
1 1/2 tbspns fish sauce
1/2 cup chopped fresh cilantro (coriander)

Slice the veal very thinly.  Rub with salt, pepper and garlic and set aside for 5 minuets.  
Chop the chillies very finely.  Heat the oil in a large wok.  Add the veal and fry on both sides
until well coloured.  Add the chillies, fish sauce and sugar and cook over moderate heat,
turning frequently until cooked through.  Mix in the cilantro, transfer to a serving plate and
serve at once.
