1 tspn MCT Oil
1 rasher bacon chopped (use low fat variety and remove rind)
1/2 onion chopped
1/4 cup chopped capsicum
1/4 cup corn kernels
3/4 cup shredded chicken (all fat removed)
1 cup cooked rice
1 tbspn soy sauce

Cook bacon in oil until browned, add onion, capsicum and corn and cook for two to three
minutes; add chicken, rice and soy sauce; cook stirring until warmed through.
