1 red cabbage, small
1 teaspoon salt
1 mango, peeled and diced
1 tablespoon cilantro/coriander, chopped
1 tablespoon granulated sugar, or to taste
1 tablespoon cider vinegar
3 lime, juiced

Cut cabbage in half. Thinly slice the cabbage by hand or using a food processor. Cut slices into
thirds, lengthwise.
Place cabbage in large bowl and sprinkle with salt. Toss well. Using your hands, press down
firmly on the cabbage.
(This will blend in the salt and help release moisture.)

Let cabbage sit for 20 minutes. Stir in mango, cilantro, sugar, lime juice, and vinegar. Toss well
and let sit at least 15 minutes before serving.
