1 red bell pepper, small, seeded and chopped
1 jalapeno pepper, split in half
1 poblano chili pepper, small, seeded and chopped
3 scallions/spring onions, trimmed and cut into pieces
1 mango, peeled, diced
1 tablespoon granulated sugar, to taste
2 tablespoon cider vinegar
1 lime, juiced
1 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1/4 cup cilantro/coriander leaves only
Slice the red pepper, jalapeno, poblano pepper and scallions using a food processor fitted with
a fine slicing blade.
Combine the sliced pepper mixture with the mango, sugar, vinegar, lime juice, salt and pepper.
Toss mixture well and chill for 15 minutes.
Fold in cilantro leaves just before serving pepper slaw.
