1 tbspn MCT Oil
1 small Onion Chopped
1 clove garlic crushed
1 carrot chopped
1 stick celery chopped
2 tbspn no added salt tomato paste
425g can tomatoes
2 cups low salt chicken stock
2 tbspn chopped fresh basil (1 tspn dried basil)
1/2 tspn dried mixed herbs
juice of 1 lemon
freshly ground black pepper to taste
Heat oil in a saucepan. Add onion, garlic, carrot and celery. Cook for 3 minutes. Stir in tomato
paste. Add remaining ingredients. Simmer uncovered for 30 minutes or until vegetables are
soft. Cool slightly. Place in food processor. Process until smooth. Return to saucepan.
Reheat. Serve topped with low fat yogurt
