180 g water
orange or tangerine peel
1 spoon of sugar
1 pinch of salt
100 g flour
2 eggs
1 coffee spoon of cinnamon
1 coffee spoon of baking powder
In a pan warm water, peels, sugar and salt. When it boils, take away peels and add flour until the
dough absorbs it and the mixture comes off from the pan’s sides. Turn the gas off and add two
eggs, cinnamon and baking powder. Fill a pastry syringe and form little balls on the oven’s plate.
The temperature is 200° for 30 minutes, but you have to check cooking often, because it’s a very
delicate dough.
